The process involves fermenting the sugarcane-derived material to create a crude alcohol, which is then distilled to achieve the desired alcohol content and purity.
This rum alcohol is typically colourless and has a high alcohol content, usually ranging from 40% to 75% alcohol by volume (ABV). It serves as the foundational ingredient for all rum products, including both aged and unaged rums. Rum alcohol usually undergoes additional processes like ageing in oak barrels to develop flavours and colours, creating the distinct characteristics associated with various types of rum.

White rum, also known as light rum, is typically clear or slightly pale in colour. It is usually aged for a short period, if at all, in oak barrels, which imparts a mild flavour profile. White rum is often used in cocktails due to its neutral taste and versatility, for example in drinks like Mojitos and Piña Coladas.
Gold rum, also known as amber rum, is aged longer than white rum, giving it a richer colour and more complex flavour. It often takes on subtle notes of vanilla, caramel, and spices from the ageing process. Gold rum is frequently used in cocktails that benefit from its slightly enhanced flavour, such as Mai Tais and Rum Punches.
Dark rum, sometimes referred to as black rum, undergoes a longer ageing process than gold rum. It has a deep, rich colour and a strong, full-bodied flavour profile with pronounced notes of molasses, spices, and sometimes a hint of smokiness. Dark rum is often sipped neat or used in cocktails that require a more intense flavour, like Dark 'n' Stormy and Planter's Punch.
Aged or premium rums are often considered the pinnacle of rum craftsmanship. They are aged for an extended period in oak barrels, which impart deep and complex flavours. Premium rums can range from lighter styles with subtle oak influence to rich, aged expressions with notes of caramel, spice, and dried fruits.
Overproof rum has a higher alcohol content than standard rum. It's often used to create intense cocktails and can also be used in recipes that call for flambéing due to its higher alcohol content.
